Sourdough Bread – Make your gut happy!

Yesterday I discovered this delicious homemade sourdough bread made by a local baker “David the Baker” and I wanted to share the wonders of sourdough with you.

You’ve probably heard of sourdough bread, maybe tried some or maybe already know everything about it and make your own! Fermented foods seem to be being talked about a lot lately and the benefits of fermented foods too. Did you know that sourdough is a fermented food? The fermentation process creates biochemical changes within the food causing it to have a multitude of benefits on our health.

Here are some of the benefits of sourdough bread:

  • It’s low GI, glycemic index, so it doesn’t create the spikes and consequently the troughs in blood sugar levels
  • Contains the all important bacteria Lactobacillus which once it reaches your gut helps your body to fight off any harmful bacteria in there. Lactobacillus also increases the formation of lactic acid in the bread which helps make the micronutrients in the bread more readily available. This is where that distinct sour taste comes from!
  • It contains less phytic acid than regular bread. Phytic acid binds to minerals in grains making it hard for your body to absorb them, especially if your digestive system is weak
  • Due to the longer prep time for sourdough bread than regular bread some of the gluten is broken down into amino acids making it easier to digest
